About this collection
Israel sits at the meeting point of the Mediterranean basin and the Levant, with olive groves rooted in terraced hillsides that have been cultivated for thousands of years. The climate combines hot, dry summers with cool winters and elevation-driven temperature swings that concentrate aroma in the fruit.
Modern Israeli producers apply low-temperature first cold pressing, rapid milling, and strict kosher certification to fruit that is often hand-harvested from traditional cultivars and local blends. The resulting oils balance old-world character with laboratory-grade consistency.
