Spain's scale is unmatched: Andalusia alone can out-produce every other country combined in a strong year, and Jaén province is effectively a single vast grove. Scale has a reputation problem in fine food, but it has also funded the most advanced milling technology in the sector.
Picual dominates, and at its best it is superb — fig leaf, tomato, a clean bitter core, and the highest oxidative stability of any major cultivar thanks to a very high oleic acid fraction. That stability makes Picual the most forgiving oil in a warm kitchen and the best choice for anyone who cooks with heat.
Catalonia's Arbequina is the counterweight: small fruit, sweet, apple-and-almond aromatics, low bitterness, and a shorter shelf life. It converts sceptics who find southern oils aggressive, and it is the standard choice for baking and mayonnaise.
Hojiblanca from Córdoba and Málaga sits in between, with a distinctive green-almond bitterness, while Empeltre from Aragón gives an unusually mellow, buttery profile. Between them these four cultivars cover almost every culinary use an American kitchen has.
