About this collection

California produces nearly all of the United States' commercial olive oil, and the state's best estates now rival Mediterranean benchmarks for quality. The combination of modern milling, strict California Olive Oil Council standards, and a climate that mirrors parts of the Mediterranean allows producers to deliver fresh, low-acidity oils with documented harvest dates.

The American style tends toward clarity and restraint: clean fruit, measured bitterness, and a focus on lab-verified chemistry over inherited tradition. Many California estates lead on transparency, publishing free acidity, polyphenol counts and peroxide values for each lot.

New World oils are often built from imported cultivars — Arbequina, Arbosana, Koroneiki, Picual — adapted to Californian terroir. The result is a category that borrows Old World genetics but speaks with a different accent: brighter, more linear, and frequently marketed around health and wellness rather than regional provenance.
