Organic certification in the olive sector governs what may be applied to the grove: no synthetic herbicides, no systemic insecticides, no mineral fertilisers outside the approved list. Groves are inspected annually by an accredited control body, and the certifier name appears on the label next to the USDA Organic seal.
The agronomic reality is that many traditional Mediterranean groves were effectively organic long before the paperwork existed. Old terraced estates on thin limestone soils never justified intensive inputs. What certification adds is verification, traceability and a documented chain from tree to tank.
Organic status says nothing on its own about flavour or freshness. An organic oil pressed late from over-ripe fruit will taste duller than a conventional oil pressed early from healthy fruit. We therefore treat certification as a floor, not a finish line: every organic oil we list also has to pass the same acidity, peroxide and sensory thresholds as the rest of the range.
Where an estate practises regenerative methods beyond the certification baseline — cover cropping between rows, no tillage, on-site composting of pomace, integrated pest management with pheromone traps — we say so on the product page, because those choices affect soil carbon and grove longevity far more than the label itself does.
