Cut grass and green almond on the nose, then a wave of green tomato leaf, white pepper and a long peppery finish that catches at the back of the throat.

Harvested in the first ten days of October, when the Koroneiki fruit is still violet-green and the mill has to work almost twice as long to release the same volume of oil. That inefficiency is the point: the earlier the pick, the higher the polyphenol load and the more assertive the aroma.
The grove sits between 320 and 480 metres above the Messenian gulf, where night temperatures drop sharply through October. Fruit is picked by hand into shallow crates, kept below 18°C in transit, and malaxed within four hours of leaving the tree.
Bottled unfiltered under nitrogen in violet glass. Expect a natural haze in the first months — a sign the oil has not been stripped of its fine solids.
