Artichoke, green banana and cracked black pepper. Structured, bitter in the best sense, with an almond echo that lingers well past the swallow.
Awards
Coratina is the backbone cultivar of northern Puglia and one of the most polyphenol-rich olives in the Mediterranean. Handled carelessly it turns harsh; handled well it becomes architectural.
Masseria Vento picks at the very start of veraison and runs a two-phase decanter at 24°C, sacrificing yield for aroma retention. The result is an oil built for cooked food rather than delicate raw dishes.
A kitchen oil for people who cook seriously — it holds its character against smoke, char and long braising.

Recipe idea
Warm chickpeas with lemon zest, flat parsley and a heavy pour of this oil poured at the table, off the heat. Finish with coarse salt and eat with bread that can take the soaking.
